Makes 15 muffins, but
would probably make 16 if you don’t eat the dough. It’s pretty tempting.
Nutrition Information: 99 calories, 11g carbs, 4g fat, 3g protien, 0mg cholesterol, 19mg sodium, 2g sugar, 1g fiber
Ingredients:
- 1 TBSP coconut butter
- 5 TBSP almond butter (crunchy is better)
- 2 small (6”) bananas
- Vanilla extract
- Cinnamon
- Almond extract
- 2 egg whites
- 1 tsp chia seeds
- 2 TBSP almond/silk/regular milk
- ¼ cup granulated sugar
- 1 TBSP oat bran
- 1 TBSP wheat bran
- 1 TBSP oatmeal
- 1 TBSP almond meal
- 1 cup white flour (better with only ½ to ¾ cup)
- ½ tsp baking soda
- ½ baking powder
Directions:
- Preheat over to 350 degrees.
- Melt coconut butter.
- Mix first 9 ingredients together (coconut butter – sugar), until combined.
- Add dry ingredients and stir until just combined.
- Fill 15 muffin tins, and bake for 12 – 15 minutes.
