Banana Almond Fiber Muffins

Makes 15 muffins, but would probably make 16 if you don’t eat the dough.  It’s pretty tempting.  

Nutrition Information:  99 calories, 11g carbs, 4g fat, 3g protien, 0mg cholesterol, 19mg sodium, 2g sugar, 1g fiber

Ingredients:

  • 1 TBSP coconut butter
  • 5 TBSP almond butter (crunchy is better)
  • 2 small (6”) bananas
  • Vanilla extract
  • Cinnamon
  • Almond extract
  • 2 egg whites
  • 1 tsp chia seeds
  • 2 TBSP almond/silk/regular milk 
  • ¼ cup granulated sugar
  • 1 TBSP oat bran
  • 1 TBSP wheat bran
  • 1 TBSP oatmeal
  • 1 TBSP almond meal
  • 1 cup white flour (better with only ½ to ¾ cup)
  • ½ tsp baking soda
  • ½ baking powder

Directions:

  1. Preheat over to 350 degrees.
  2. Melt coconut butter.
  3. Mix first 9 ingredients together (coconut butter – sugar), until combined.
  4. Add dry ingredients and stir until just combined.
  5. Fill 15 muffin tins, and bake for 12 – 15 minutes.
