Guiltless Double Chocolate Oatmeal Cookies ~ With Yogurt!



The true name should read -EAT ME EAT ME!  Kidding... no, but really... I should call them "Guiltless Gluten Free Double Chocolate Chip Oatmeal Yogurt Cookies". Whoa, is that a mouthful!  And that is exactly what you will get - a mouthful of CHOCOLATE!

To celebrate Valentines Day - which should NEVER start the day after Ash Wednesday (are you kidding me?!) - I decided to follow the food blog / food network / and desperate ladies in need trend... and create something chocolate.  I will be posting a not-so-guiltless recipe soon.  So head-ups!

I would highly recommend adding a banana to this recipe.  I didn't have one on hand.  The calories would change from 62 per cookie to a whopping 65.6 per cookie.  Whoa there... don't get out of hand - haha.  

I should also note that these are not too sweet.  If you want them to be sweeter, add some sugar and another tablespoon of cocoa powder.  These satisfied my chocolate craving... but we're all different.  Also, I HAVE to say - these double with yumminess if baked and then frozen.  Not sure why, but when I pulled one out of the freezer - it was SO much tastier.

Yields roughly 25 servings at about 1-tablespoon each

Nutrition Information:  62 calories, 12g carbs, 1g fat, 2g protein, 0mg Cholesterol, 5mg Sodium, 6g sugar, 5g fiber


Ingredients:

  • 1 teaspoon Coconut Oil
  • 2 tablespoons Unsweetened Cocoa Powder
  • ½ teaspoon instant coffee (dry)
  • 1 tablespoon boiling water
  • Vanilla Extract – to taste
  • Almond Extract – to taste
  • Cinnamon – to taste
  • ½ cup Non-fat Plain Greek Yogurt (I use Fage Total 0%)
  • ¼ cup white sugar
  • ½ cup unpacked brown sugar
  • 1 large egg white
  • ¼ cup Semi-sweet chocolate chips
  • 2 cups Old Fashioned Rolled Oats (divided)
  • ¼ cup Oat Bran
  • ½ teaspoon of baking soda 


Directions: 

  1. Blend 1 cup rolled oats in a food processor until it resembles flour – or you can buy oat flour.
  2. Preheat oven to 350 degrees Fahrenheit.
  3. Heat water and pour over coconut oil and instant coffee - mix until coffee has dissolved.
  4. Add cocoa powder and stir.
  5. Add extracts, cinnamon, and yogurt - mix.
  6. Add sugars, egg white and chocolate chips – mix.
  7. Add oats, oat bran, oat flour, and baking soda – mix until just combined.
  8. Bake for 9 minutes and enjoy!
