Lightened Up Leftovers ~ Pho Take-out

Yields roughly 2 servings

Nutrition Information:  126 calories, 9g carbs, 2g fat, 17g protein, 40mg Cholesterol, 338mg Sodium, 5g sugar, 3g fiber



The other night, the girls and I had our weekly date night :).  We like to get Pho - it's cheap, delicious, and slightly different than our "per-usual" weekly dinners.  But you get SUCH A BIG BOWL!!!  Which, I have no problem with - haha.

I like to order a "large" because it is only 50-cents more... Can you get a better deal?  When I order, I ask for a "to-go" container.  Oh, I should mention now... I am not a big noodle person, hence the Pho (without noodles).  It's not that I don't like noodles - they just don't make me feel that great.

Anyways, when I am served my delicious, steaming bowl of yumminess - I "doctor" it all up with veggies and those red pepper flakes.  Then, I put 1/2 to 3/4 of it in my to-go container.  When I get home, I undo the soup.  I remove the chicken/fish and vegetables from the broth.  Then, I chop up the chicken/fish (because their pieces are always so large), measure my remaining ingredients, and make 1 to 2 leftover meals.  You can add green beans, asparagus, carrots, red bell peppers, or whatever your favorite vegetables are that week.

I ALWAYS have frozen green beans on hand.  Mostly, because Shaymus likes them... but also because I like them and they are an awesome filler veggie.

So... go out, eat, laugh, and enjoy!  With Valentines Day just around the corner... this may be a great way to indulge without over-indulging.

Ingredients: 

  • 2/3 cups Green Beans (frozen or raw)
  • 2/3 cups Chicken Breast, chopped
  • ½ cup Asparagus
  • 1 cup Pho broth
  • 1 Jalapeno pepper
  • 1/3 cup Carrots, chopped
  • ½ cup Bean Sprouts

Directions:

  1. Take remaining Pho broth, chicken, and vegetables, and add vegetables.
  2. Heat in pot and enjoy!
  3. P.S. - this is GREAT in the freezer :)
