Gluten and Dairy Free Almond Blondies


Happy Gluten Free Friday!  Why GF?  Not sure - for whatever reasons you want :).  Maybe have a glass of champagne instead of a beer tonight and shave off 50-100 calories.  Vodka soda with grapefruit juice anyone???

Yields roughly 25 servings at about 2” squares

I found this recipe, Almond Butter-Quinoa Blondies, at Eatingwell.com.  I LOVE this website!  They're recipe looked super yummy, but I didn't have any quinoa, which is like a total sin.  I replaced the butter with a banana and reduced the amount of sugar and flour.

They ended up super fluffy and yummy!  My fiance and his dad ran back for seconds - even after I told them that there was no butter or flour.  Haha - boys.  I hope you enjoy these as much as we do!  Happy Friday y'all!

Ingredients:

  • 1 medium banana (about ½ cup mashed)
  • 2 eggs
  • ¾ cup Raw Almond Butter
  • 1/3 cup brown sugar, unpacked
  • 1/3 cup white sugar
  • 2/3 cup chocolate chips
  • Vanilla and cinnamon to taste
  • 2/3 cup Bob’s Red Mill Gluten Free Oat Flour
  • 1/3 cup Old Fashioned Rolled Oats
  • 1 teaspoon baking soda 


Directions:


  1. Preheat oven to 350 degrees Fahrenheit.
  2. Mash or puree banana, eggs, cinnamon, and almond butter.
  3. Mix in brown and white sugar.
  4. Mix in chocolate chips.
  5. Mix in oat flour, rolled oats, and baking soda.
  6. Pour into greased (I use coconut oil) 8”x8” square baking dish.
  7. Bake for about 25 minutes or until fragrant and toothpick comes out clean.  Let cool before cutting.
