Grilled Pork Chops with Tropical Salsa

After a glorious Bachelorette weekend with all of my beautiful and smart friends, I came home to the man of my dreams.  It was SO hot last night that I just HAD to grill.  I'm slowly learning... as our kitchen will be demolished very soon AND... OMG... grilling is so good, easy, and healthy!  Why did I not do this before?!?!!?

Oh, right... I was living states away with Shaymus.  

Anyways, I hope y'all enjoy this recipe as much as we did!  We sat on the front porch and watched squirrels argue while sipping an IPA.  Ha!  You'd think we live in the boon-docks with that last sentence...  we don't ;).

Btw - you can make this recipe Paleo.  Oh, and grilled asparagus pairs very well.

Ingredients:


Pork:  Makes 4 servings at one pork chop each

  • 4 pork chops (around 4.7 ounces each)
  • ¼ cup BBQ sauce (I use Rudy’s Sissy Sauce)
  • Lime juice (from 1 juicy lime)
  • 1 teaspoon cinnamon
  • Garlic Salt to taste
  • ¼ cup white wine
  • 1 teaspoon of your favorite hot sauce

Salsa:  Makes 16 servings at ¼ cup each

  • 1 cup chopped pineapple
  • 1 large mango, chopped (ripe, but not mushy)
  • 6 garlic cloves
  • 1 jalapeno
  • Lime juice - 2 juicy limes
  • ¼ cup cilantro
  • ¼ cup white or red onion

Directions:


Pork:

  1. Place pork chops in a large glass bowl and add all ingredients. 
  2. Let marinate for at least 30 minutes and periodically stir to coat the chops.
  3. Grill on either side, roughly 5 minutes/side.

Salsa:

  1. In a food processor, mince garlic, jalapeno, cilantro, and onion.  Pour in lime juice.
  2. Mince (by hand) pineapple and mango.
  3. Combined all ingredients and stir.

Pork:  170 cal, 3g Fat, 3g Sugar, 0g Fiber                  

Salsa:  20 cal, 0g Fat, 4g Sugar, 1g Fiber
